With this idea, I’m following two choices that interest me: Ninety Plus’s Criolic Folio processing, and XLIII’s extremely light roasting.
At Gesha Estates, Ninety Plus has been returning former cattle land to forest since 2009. Gesha grows beneath native trees; the care begins long before the coffee reaches a roaster.

Meet the place and the process

Cold fermentation. More of the plant.
In its Criolic method, Ninety Plus uses low temperatures to slow fermentation. Folio adds other parts of the coffee plant, including leaves and flowers. That is the producer’s work; the proposed edition would be roasted by XLIII.
